Sweet Potato Broccoli Bites

Let me preface this entire post by saying this recipe is “nom dot com”. These bites are majestic treasures. 

So in my effort to carb load this week I’ve  been trying to get my carbs from he most nutritious sources. Sweet potatoes are a favorite of mine, being so delicious and such.

Plus I like simple. I like food to be ready fast so I can eat it. 

Ok so here’s what you need:

-1 medium-to-large sweet potato 

-1 bag of frozen broccoli (in a steam bag)- it makes it easier but you can steam your own 

-1 cup oatmeal (pulverized in a blender or processor) – you can do seasoned bread crumbs too

-2 Tbsp Parm Cheese

– 1 eggs

Poke holes in the potato with a fork, microwave for 5 minutes- or until soft. 

Let cool then scoop the potato into a bowl with the egg- then start steaming your broccoli. While that is happening try to blend the potato and egg. 

Also take your 1 cup of oats and blend them to a fine powder – again these function to hold everything together- seasoned bread crumbs would also work well too taste wise (but would add more sodium).

The most important part is making sure your broccoli is steamed really well- once cool- cut/chop the broccoli until it’s basically smashed broccoli.

Then mix everything together.

Form in to balls – this makes about 24-30 “tots”. 

Cook at 375 for 20 minutes or until edges are brown and crisp. Dip in sauce of your choice.

Pat and I loved these, and he doesn’t even like sweet potatoes all that much. So that’s kind of saying somethings. 

These little treasures were so packed with “yum” it was unreal, and agin they are a really low maintenance thing to make.
