So today is Fat Tuesday, aside from all of the Paczki’s I plan to stuff in my pie-hole, there is a potluck at work.
I’ve been sitting on this recipe for awhile, and really wanting to make it -but not having an occasion to. On top of that a few of my colleagues are gluten free (time to bust out the coconut flour)!!!!!!!!
Ingredients & Steps:
Pre-heat oven to 350, grease a loaf pan with coconut oil
-4 Large eggs
-1/3 cup melted or softened coconut oil
-1 teaspoon apple cider vinegar
-1/4 tsp lemon juice
-1 tsp vanilla extract
-3 tbsp raw honey
-1/2 tsp baking soda
-1/2 cup coconut flour
-1/3 cup shredded dried unsweetened coconut
1/2 tsp of dried French Lavender buds
> Take all of the above ingredients, and in order add them to a food processor with a basic “mixing blade”- EXCEPT the lavender buds. Once you have a batter formed, fold the lavender in last.
>Put the batter in a loaf pan, and sprinkle buds on top
>Place in ove, and bake at 350 for about 33-35 minutes – or until when you insert a knife or toothpick – it comes out dry.
>While the cake is baking you can make the glaze
-3 tbsp filtered water
-1 tbsp + 1 tsp raw honey
-1 tbsp coconut butter/manna (i.e. marantha coconut butter)
-1/4 – 1/2 tsp lemon juice
-1/4 tsp lavender buds
>whisk all together, and pour on top of cake before serving
>what I did – I let the cake cool, put a little of the glaze on, then I cut it, and put more of the glaze on.
I was pleased with this decision.
This also turned out to be a fairly healthy recipe- the macros are below.

And not only does this taste amazing – the lavender makes it so incredibly fragrant! My apartment smelled divine last night. This is a great dessert to take somewhere or make just in general – it being gluten free is a plus, but I personally enjoy coconut, so I loved the flavors!
