Sweet & Spicy Kale Salad – Recipe

As I many times do – I recently got a little inspiration from Tone It Up (TIU) for a meal idea.  It was a citrus, kale salad, original recipe here .

One thing to know about kale – it really is a super food it is jam packed with nutrients like iron, vitamins A, C, & K, fiber, manganese, Vitamin B6, copper, calcium, & folic acid.

So yes it is a super food – but if you do not dress it appropriately or treat it properly it can be very bitter.

You can follow the recipe exactly from the link above.  However, I made a few of my own adjustments, what I used:

– 4 leaves kale, ripped/shredded

-1 Grapefruit, sectioned

-Carrots – julienned

-Roasted Chicken

Dressing:

-1 Tbsp olive oil or almond oil

-2 tsp honey

-1/2 tbsp Cider Vinegar

-1 orange or lemon – juiced (or the “dressing”)

-add black pepper & curry powder to taste (I thought this really added some pizazz)

This was super duper easy – all in all it took me about 5-10 minutes (peeling and sectioning the grapefruit took the longest), but this is a perfect post workout/post run meal.  I had a little protein to help rebuild my poor aching muscles, and a little carb from the grapefruit.

It was also really visually appealing because of the different colors!

The dressing was a great way to cut any bitterness from the Kale down, and putting black pepper on the salad, and especially the grapefruit added a nice little kick.

It’s clearly a basic salad, but this was a fast healthy meal, and a great way to make a clean dressing, and enjoy those fantastic leafy greens!!!
