In my effort to become less of a
carb whore continuously increase my fruit and vegetable intake, I recently experimented with some spaghetti squash.
I found a recipe that seemed easy and I followed it.
Here is what this little panda did
Step 1: Procure Spaghetti squash and other desired ingredients (meat/veggies/sauce)
Step 2: Bring said materials home and bask in the glory that you are selecting a somewhat healthier alternative. It’s ok to feel smug at step 2.
Step 3: Pre-heat your oven to 375
Step 3 a- Procure a sharp knife. Cut the squash in half long wise (length wise?), and scoop out the seeds
Step 4: I personally placed the squash cut side up- I noticed when going through recipes there is some variation some say cut side down, some say cut side up…. I think it is dealers choice- just put the squash on a baking sheet
Step 5: Season the squash- I took a little olive and truffle oils and rubbed the inside of the squash (cut side up), and seasoned the crap out of it with basil, and pepper. Place the squash in the oven for about 50 minutes or until the squash is super duper tender to the fork
Step 6: Pour yourself a glass of wine. It’s ok to feel smug again.
Step 7: I used frozen meatballs because I just happened to have some in my freezer. I recommended making your own, and having some frozen ones on hand. I will post a recipe for my homemade meatballs soon. You can always brown some lean beef or turkey whilest your squash marinates.
Step 8: If you are adding additional veggies to the pasta either throw them in with your browned meat and season, or grab another baking sheet and thrown them in the oven for 20 minutes. (I added squash, and zuchini, I drizzled them in olive oil, and seasoned with basil- threw them in the oven to bake for about 20 minutes)
Step 9: Mix everything together. Take your thawed/cooked meat, and your veggies and put them in the same cooking vessel. A large pan/skillet works well for this. Let your squash cool for a minute or two, then take your fork and scoop out the golden squashy goodness. Add squashy goodness into the skillet with meat and veggies.
Step 10: Add the sauce of your choosing. Props to you if you make your own- I typically use a Tomato Basil sauce that I find at Trader Joes.
Step 11: Prepare a plate/bowl of this. Top mozzarella if you desire. Replenish your wine glass.
Step 12: Enjoy & again- it’s ok to feel a little smug for jamming in a boat ton of veggies in one meal.
