Last week I realized I had a crapload of stuff in my pantry, and freezer. One of things I really had an excess of were grains (I have like 4 boxes of brown rice, 3 things of pasta, and a bag of orzo). Mind you I was tired, and the orzo was sitting innocently on the counter….so that was what got boiled up.
I then realized I was in an excess of various low-sodium broths (vegetable, chicken etc). Trader Joe’s Low-Sodium Vegetable broth- is one of the only TRULY low-sodium broths on the market. There is only (approximately) 130 mg of sodium per serving. So I got some of that boiling…
I thawed some shrimp, and I already have plenty of frozen veggies on hand. So here is what I did, and I got a pretty big batch.
1 cup uncooked orzo
~2 cups of LS veggie broth- add water as needed to make sure orzo does not dry out
3/4 lb frozen shrimp, thawed, sauteed with garlic and shallots
Frozen broccoli (a few handfuls)
1/2 bag steam-able black beans/corn/peppers added lime juice
I boiled the orzo, and simultaneously cooked the shrimp, and veggies in a separate pan. Once the orzo was cooked through, and the shrimp was cooked, I added the orzo into the pan with shrimp and veggies.
This whole process took me approximately 20 minutes – this includes thawing the shrimp, and cooking the orzo. I like eating clean, but I also like eating fast.
Really you can make this recipe with any variation
Step 1) Pick your grain (whole wheat pasta, couscous, quinoa, orzo etc)
Step 2) Pick your protein (shrimp, beans, tofu, chicken, beef)
Step 3) Pick your veggies (the sky is the limit here, I really like frozen, so I can just select what I am in the mood for)
And there you have it. Additionally you could remove the grains from this completely and put it in a tortilla, or even have a 1-1 1/2 cup portion with a generous side of veggies.
